- 2 large Japanese white eggs
- pinch of sea salt
- pinch of freshly grounded black pepper
- 2 slices of nice toast
- a little bit of unsalted butter
- a little bit of chopped chives for serving
I only use good quality fresh eggs for poached eggs. I prepare two eggs today because I am showing you two different ways to poach the eggs. Crack the egg and put it into a sift to get rid of the watery egg white. Watery egg white would float in the water or stick to the surface of your poached eggs to make your eggs not looking very nice.
After getting rid of the watery egg white, pour the egg carefully into tea cups or small bowls. This would help holding the shape better when you pour the eggs into hot water. Make sure you do this in advance, so you could manage the cooking time more precisely. Timing is important for poaching eggs.
Boil some water in a pot. The water is about 5 inches deep. Turn off the heat, then use a tool to stir the water in one direction to make a whirlpool.
Put the egg right in the middle of the whirlpool. Do this close to the surface of the water.
This way could keep the egg in a perfect shape, but you could only cook one egg every time.
The egg would be perfectly poached after 3 minutes.
Egg white should be firm and egg yolk should be wobbly.
Another way to poach eggs is quite similar. Boil a pot of water about 5 inches deep. Turn off the heat once the water is boiled. Don’t need to stir the water this time. Just pour the egg into the pot close to the surface of the water straight away.
This way you could cook maximum 3 eggs at the same time in a pot like this.
Make sure you cover the lid if you cook more than one egg. It takes 3 minutes to 3 minutes 15 seconds depends on the number of eggs.
Then take the egg out carefully.
The egg on the left is the first one and the egg on the right is the second one. The first one is in perfect shape, but the second one is quite nice too. I normally use the second method because it is quicker to get all the eggs ready for the whole family.
Dry the eggs with paper towels carefully before using them for any dishes.
I want to make a poached egg on toast today. First of all, butter a piece of nice toast.
Then put a poached egg on top. Add some sea salt and black pepper.
Sprinkle some chopped chives at the end. Done! Simply delicious!
