香脆炸薯餅

食材

  • 400克土豆(美國焗薯)
  • 1隻大雞蛋
  • 4 湯匙中筋麵粉
  • 4 湯匙粟粉
  • 3 湯匙帕瑪森芝士碎
  • 1/3 茶匙洋蔥粉
  • 1/3 茶匙岩鹽
  • 1/4 茶匙大蒜粉
  • 1/4 茶匙黑胡椒粉
  • 1/6 茶匙辣椒粉 (可省略)
  • 5毫米深葵花籽油或者米糠油(用來炸薯餅)

烹飪步驟

首先把薯仔削皮。

然後刨成粗絲。

用凍水把薯仔絲清洗兩次,洗去多餘的澱粉。

把洗好的薯絲瀝乾水。

放進布包裏搾去水分,也可以用茶布。

然後用厨房紙抹乾表面的水分。

在另一個大碗裏把調味料混合好,包括麵粉、粟粉、帕瑪森芝士碎、洋蔥粉、大蒜粉、岩鹽、黑胡椒粉和辣椒粉。

把混合好的調料撒在薯絲上,攪拌均勻。

再打一隻雞蛋進去。

攪均勻。

把已調味的薯絲壓平再平均分成8份。

在平底鍋裏加5毫米深的葵花籽油、花生油或者米糠油,加熱後把薯絲一份一份地放進熱油裏。

將薯絲在鍋裏修整成楕圓形,用中慢火把薯餅煎黃。

一面煎黃了,翻過去再煎另一面。

兩面都煎金黃了就可以拿出來。

讓薯餅放涼5到10分鐘就可以吃啦。香脆可口﹗ :)

煮食貼士

  • 用大約5毫米深的油可以方便整形,也會炸得香脆。
  • 炸薯餅要用冒煙點高的食油,包括米糠油、葵花籽或者花生油。
  • 翻薯餅的時候可以用兩個鍋剷慢慢翻才不會被熱油燙到。
  • 加一點粟粉會讓薯餅更脆。
