Egg Tortilla Wrap Breakfast Recipe

Egg Tortilla Wrap

This delicious egg tortilla wrap is a quick and easy breakfast recipe. It only takes a few minutes to make a nice breakfast.


Serves : 2 servings

Preparation Time : 2 minutes

Cooking Time : 6 minutes


  • 2 pieces of tortillas
  • 1 small shallot (chop)
  • 4 large eggs
  • about 2 tbsp of bacon or ham (slice)
  • a few pieces of basil
  • 2 tsp of grated Parmesan
  • 2 slices of Cheddar
  • 2 tbsp of Mozzarella (Optional)
  • 2 tbsp of extra virgin olive oil


Add extra virgin olive oil into a pan

Heat up a pan and add 1 tbsp of olive oil.

Put chopped shallot into a pan with olive oil

Put some chopped shallots in the pan.

Put pancetta bacon into a pan with olive oil and chopped shallot

Then add some sliced bacon. I used Pancetta. You can use streaky bacon or ham too.

Put 5 basil leaves into a pan with olive oil, chopped shallot and pancetta bacon

Use low heat to brown the chopped shallots and sliced bacon slowly. Then add a few basil leaves.

Pour beaten eggs on the ingredients in a pan

Beat two eggs and pour into the pan to cover all the ingredients.

Sprinkle grated Parmesan cheese on the egg mixture in a pan

Sprinkle some grated Parmesan on top.

Cover the egg mixture in the pan with a tortilla and press with a hand

While the eggs are still runny, place a tortilla on top and press it with your hand. The eggs and the tortilla would stick together.

Flip the tortilla with egg mixture with a hand and a spatula

When the eggs are set. Flip the tortilla with a spatula.

Place sliced Cheddar cheese on top of the tortilla with egg mixture

Then put the halved slice Cheddar in the middle of the flipped tortilla.

Place grated Mozzarella cheese on top of the tortilla with egg mixture

Follow with some grated Mozzarella cheese. This is optional.

Fold the tortilla with two spatula

Then fold the tortilla into a wrap with two spatula carefully.

Brown both sides of the wrap.

    I have tried to make it following the recipe but seems like I am messing up with salts. Please let me know how not to make the recipe salty?
