Egg Tortilla Wrap : Quick and Easy Breakfast Recipe


Serves : 2 servings

Preparation Time : 2 minutes

Cooking Time : 6 minutes


  • 2 pieces of tortillas
  • 1 small shallot (chop)
  • 4 large eggs
  • about 2 tbsp of bacon or ham (slice)
  • a few pieces of basil
  • 2 tsp of grated Parmesan
  • 2 slices of Cheddar
  • 2 tbsp of Mozzarella (Optional)
  • 2 tbsp of extra virgin olive oil


Heat up a pan and add 1 tbsp of olive oil.

Put some chopped shallots in the pan.

Then add some sliced bacon. I used Pancetta. You can use streaky bacon or ham too.

Use low heat to brown the chopped shallots and sliced bacon slowly. Then add a few basil leaves.

Beat two eggs and pour into the pan to cover all the ingredients.

Sprinkle some grated Parmesan on top.

While the eggs are still runny, place a tortilla on top and press it with your hand. The eggs and the tortilla would stick together.

When the eggs are set. Flip the tortilla with a spatula.

Then put the halved slice Cheddar in the middle of the flipped tortilla.

Follow with some grated Mozzarella cheese. This is optional.

Then fold the tortilla into a wrap with two spatula carefully.

Brown both sides of the wrap.
