This is a rather Christmasy porridge recipe because I added sauteed apple, dried fruits and spices in this breakfast porridge. It is really warm and comforting.
Serves : 2~3 bowls
Preparation time : 5 minutes
Cooking time : 10 minutes
Ingredients
Oatmeal:
- 1 cup rolled oats
- 2.5 cups of water
- a pinch of sea salt
- 1/2 cup unsweetened almond milk
- pinch of ground cinnamon
- 1/4 cup of mixed dried fruits (raison, currants, orange peel, lemon peel, apricot)
Topping:
- 1 apple
- 2 tbsp of mixed dried fruits (raison, currants, orange peel, lemon peel, apricot, cranberries)
- 1/4 tsp ground cinnamon
- pinch of ground nutmeg
- 2 tsp Demerara sugar
- knob of unsalted butter
Instructions

Dice the dry apricot into similar size of rasin. Peel and dice an apple and set aside. Use a crunchy and sweet apple.

Heat up a pan and melt a knob of unsalted butter. Add 2 tsp of Demerara sugar in the melted butter.

Once the sugar is melted, put the diced apple in and stir.

Add 1/4 tsp of ground cinnamon, pinch of ground nutmeg and 2 tbsp of mixed dried fruits in the pan and mix well. Turn off the heat and set aside when all the ingredients are hot and mixed well.

Put one cup of rolled oats in a pot, then add a pinch of salt and 2.5 cups of water. Turn on the heat and bring it to the boil.

Then turn down to low heat and keep stirring in one direction until the porridge is thick and smooth. That would take about 3 to 4 minutes.

Add a pinch of ground cinnamon, 2 tbsp of mixed dried fruits and 1/2 cup of unsweetened almond milk.

Then keep stirring in one direction and bring it to the boil again.

Turn off the heat and serve the porridge with the sauteed apple on top. What a comforting breakfast!
