These mini pizzas are really easy to make and very delicious. I use pita bread to be the pizza base, so you could save all the hassles and time from making the pizza dough. It takes less then 15 minutes to cook these crispy and tasty pizzas. I share two different toppings combinations with you. One is salami, cherry tomatoes and basil, another one is pancetta and mushrooms. You could be creative to come up with your own combinations. Kids love these pizzas!

Ingredients
Two salami & cherry tomatoes pizzas
- 2 pieces of whole wheat pita bread
- 2 tbsp of tomato and basil pasta sauce no added salt
- 2 tbsp of grated Parmesan cheese
- 8 slices of salami
- about 10 cherry tomatoes
- 4 tbsp of mozzarella cheese
- a few pieces of basil
- 2 tsp of extra virgin olive oil
Two pancetta & mushrooms pizzas
- 2 pieces of whole wheat pita bread
- 2 tbsp of tomato and basil pasta sauce no added salt
- 2 tbsp of grated Parmesan cheese
- about 4 to 5 button mushrooms
- about 2 table spoons of pancetta
- 4 tbsp of mozzarella cheese
- pinch of smoked paprika
- 2 tsp of extra virgin olive oil
Instructions

First of all, preheat your oven to 250°C. Then clean the button mushrooms with a cloth and then slice them into thick slices (about 3 mm).

Halve the cherry tomatoes and set aside.

Then, lay a piece of cooking paper in a shallow baking tray and put the pita bread in the tray. Brush extra virgin olive oil on one side of the bread.

Then put the bread into the oven for 1 to 2 minutes or until the bread are slightly brown.

Take the bread out and spread one table spoon of tomato and basil pasta sauce on each pieces of pita bread. You could buy the sauce from the supermarket. I chose an organic tomato and basil pasta sauce without added salt because other ingredients are salty.

Sprinkle grated Parmesan cheese on top of the sauce. About one table spoon for each pizza.

Put 4 slices of salami on one of the pizzas.

Put sliced mushrooms on the other pizza.

Then add some Pancetta on top of the mushrooms.

Put those halved cherry tomatoes on top of the salami because salami sausages are easy to burn.

At last, sprinkle about 2 table spoons of Mozzarella cheese on each pizza. Afterwards, put the pizzas into the pre-heated oven. Turn down to 220°C and cook for 7 minutes or until the cheese is melted and slightly brown.

Before serving, you could sprinkle a pinch of smoked paprika on the Pancetta and mushroom pizza and add a few pieces of basil on the salami cherry tomato pizza. These are optional. Bon appétit!
