Chicken Quesadilla

Serves : 6 quesadillas

Preparation time : 15 minutes

Cooking time : 30 minutes

Ingredients

  • 6 tortillas
  • 1 tbsp of extra virgin olive oil (brush the tortillas)
  • Mexican 3 cheese blend (Monterey Jack Jalapeno Pepper Cheese, Muenster Cheese & Cheddar Cheese)

Chicken:

  • 2 boneless chicken legs
  • 18g of mild taco seasoning mix
  • ¼ tsp of sea salt
  • 1/6 tsp of ground black pepper
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp of peanut oil (fry the chicken)

Sauteed Vegetables:

  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 small white onion
  • 2 cloves of garlic
  • ¼ tsp of sea salt
  • 1/6 tsp of ground black pepper
  • 2 tbsp of extra virgin olive oil

Instructions

First of all, wash and dry the boneless chicken legs. Then marinate them with 18g of mild taco seasoning mix and 1 table spoon of extra virgin olive oil.

Use hands to rub the seasoning into the meat and marinate it at least 15 minutes.

Next, we can prepare the vegetables. Slice the bell peppers.



Slice a small yellow onion.

Mince the garlic cloves.

Heat up a big pan and add some extra virgin olive oil. Stir fry the slice onion with medium heat for about 2 minutes.

Then add the sliced bell peppers and stir again.



Season the vegetables with salt and pepper, and add the minced garlic.

Sautéed the vegetables until they are soft and a bit brown.

Heat up a non-stick pan and add some peanut oil. Put the chicken in with skin side down.

Pan fry the chicken legs with medium low heat until they are cooked and the skin is crispy.

Let the cooked chicken legs cool down a bit on a rack, then dice them.

Get one tortilla. Put some cheese on one side. Then put some chicken meat on top.

Add some sautéed vegetables.

More cheese.

Then fold the tortilla and brush some olive oil on. You could put another tortilla on top of the stuffings too, but I found this folding version of quesadillas are easier to manage for kids. Put more cheese, so all the ingredients would stick together.

Grill the quesadillas on a hot pan. You can brush some oil on the other side of the quesadillas.

You can grill the quesadillas in a normal pan too. It is perfectly fine.

We normally serve chicken quesadillas with salsa sauce, guacamole or a simple salad. Yum!

Cooking Tips:

  • Other than boneless chicken leg, you can use skinless chicken thigh too. Juicy! I am not a big fan of chicken breast :P.
  • You can either use taco seasoning or blend your own seasoning. I like to use mild taco seasoning so my kids can eat them too. It is delicious and so convenient. If you want to blend your own seasoning, you can mix up some smoked paprika, cumin powder, onion powder, dried oregano, cayenne pepper (optional), salt and ground black pepper.
  • I use 3 cheese blend (Monterey Jack, Muenster cheese and Cheddar cheese).
  • You can serve chicken quesadillas with sour cream, guacamole or pico de gallo.
